This is one of my favourite dish. I was cleaning. up my desk drawer and stumble across this recipes, handwritten by Mom.

- 750 gr Calamari medium sized cut
- 1 pcs carrot sliced think (optional)
- 1/2 pcs Green Capsicum sliced into medium about 1.5 cmx1.5 cm (Optional)
Spices
- 8 sheet lemon leaves thinly cut
- 2 stalk lemon grass smashed
- 2 cm galangal (lengkuas) smashed
- 2 tbs sweet soy sauce
- 1 tsp salt
- 1 tbs palm sugar
- 10 pcs red chilli
- 2 tbs Cooking oil
- 5 pcs fresh shallots
- 2 pcs spring onion
Garnish
- 1 stalk spring onion chopped thin

Instructions
- Grind the fresh shallots and Onion, then set aside.
- Heat oil in the frying pan, then tip in the grind shallots and onion till the fragrance came out
- Tip the rest of the ingredient in the spices, and stir till it smells good.
- (Optional) You can add capsicum and carrots if you like some vegetable to go with it.
- Tip in the calamari, and stir well, the calamari is cook when it starts to curl.
- Serve it in the dish and sprinkle some spring onion for garnish
