Kue Lapis Pandan

This is my childhood favourite, enjoy it with a cup of tea or coffee in the afternoon. Don’t forget to peel the cake layer by layer.

Instructions
Pandan Flavoured layer
  1. Mixer fresh Pandan leaves with the water, and press the juice out to get the pandan flavour, make sure this mix contain 150ml of pandan flavoured juice in the end.
  2. Mixed the pandan flavoured juice with all the other ingredient, tapioca flour, rice flour, sugar, and coconut milk. Stir it well until all are mixed evenly and there is no lump of flour left. Set aside.
Coconut Milk Flavoured layer
  1. Mixed all the Coconut milk Flavoured ingredients, tapioca flour, rice flour, sugar, coconut milk and water. Make sure you stir it well and all ingredients are mixed and there is no lump of flour left. Set aside.
Cooking
  1. Boiled the steamer with water. Cover it up and wait until the water is boiled.
  2. Pour the first thin layer of coconut milk flavoured solution into the baking tray, then cover and steam it in the steamer for 3 minutes.
  3. Bring back the tray and pour the second thin layer of Pandan flavoured solution into the baking tray, then cover and steam it in the steamer for another 3 minutes.
  4. Repeat the above until all the 2 solution are finished. Then steam it for another 15 minutes.
  5. Let the cake to cool down, and peel it out of the baking tray. Cut it into smaller slices to your heart's content. Serve and enjoy peeling each layer of the cake while you eating it.
