This is one of many Chilli paste recipes that I have. But this is the one that makes the difference. It is what makes you sweat, and you feel good after it.

Ingredients
- 100 gram Dry Chilli soak and blended to much finer flakes
- 400 gram sugar
- 450 gram Vegetable oil
- 4 tb spoon fish sauce
- 100 gram Dried shrimp (ebi) blended, stir fry and set aside
- 1 Kg Red onion blended
- 2 tb spoon salt

Instructions
- Pour the vegetable oil in the large pan, wait until it is hot and fry the onion until almost dry
- Mix in the Chilli and add salt to taste
- Add the dried shrimp, fish sauce and sugar
- Keep mixing until caramelised and thick
